The Eye Round is a lean, boneless cut of meat from the highly utilized Round Primal muscle.
In Argentina, a popular and delicious way to prepare it is as “Milanesas de Peceto” (breaded and fried slices). Alternatively, it can be cooked as a roast in the oven, ideally at low heat to enhance tenderness, and then sliced thinly across the grain.
